YPP®

The YPP® is a continuous cooker which copies the traditional batch method of making caramel, in which both the cooking and the caramelization take place simultaneously. The solution is pumped in through the bottom of the specially designed tank which has multiple steam jackets. Agitation is via two counter stirrers which enhance emulsification of the mass resulting in a smooth creamy caramel. Residence time for caramelization is set via a special weir design at the top of the tank where the mass is discharged.
