Rotorstar® was developed for the continuous processing of butter toffee with the main ingredients being sugar, butter and glucose. The high fat content gives this high boiled product a fine and snappy texture. Up to 15 % per volume of chopped or grinded nuts can be added to the mass prior to cooking. The nuts get a roasting note during cooking giving the product its traditional taste. Rotorstar® can accept nut pieces up to 5 mm in size. Larger particles or whole nuts can be blended into the mass after cooking in the downstream SOLLICH SMC mixer.
