A number of systems are available for preparing a slurry or solution before this is pumped to the cooker. The ECORGRAV® uses the moisture in the glucose to dissolve the sugar crystals (or Isomalt) without adding potable water, thus saving up 50 % and more on energy costs. This is mostly used for hard candy, chewy candy, fondant and binders. The AUTOGRAV® is designed with either hot water or steam jacked heating and is most commonly used for masses which contain protein, like caramel when steam heating is applied or for various other types of masses such as jellies, binders and fondants when using hot water in the jacket. Both the above can be supplied with a big bag feeding system for sugar or Isomalt.
