The system includes a mix tank with high shear mixer for hydrocolloids, a slurry metering pump to feed the Sucrotwist® pressure dissolver and the complete vacuum chamber with vacuum system to allow the product of all type of jellies. The system is PLC controlled and design is based on the production sized units as with all the PRINCESS® lab cookers from CHOCOTECH. In this special execution the skid also houses a “Direct Steam Injection” (DSI) jet cooker for pressure dissolving high amylose starch.
