Caramelization

The CARASTAR® batch cooker with optional agitator scrapers is one of the most universal type systems for combined cooking and caramelizing. For continuous processes there is a choice between the SUCROFILM® / CARAFLEX® combination which is the most frequently used system and the batch / continuous YPP® which combines cooking and caramelizing in one unit. For higher boils such as brittles butter toffees the ROTORSTAR thermal oil heated unit is the number one choice.
